Tonight Sammy told me she has pumpkin, smoked salmon, baked beans and dried red lentils. I have to ask Sammy, how much smoked salmon do you eat? Yeah I know… you love that shite. What about pumpkin? And beans? Curiosity is just getting the better of me now…
Normally I would say make a dahl out of the lentils, a dip out of the pumpkin, eat the baked beans for breakfast tomorrow and put the smoked salmon on your coffee table as a conversation starter… Imagine explaining that one.
Anyway, as it stands these are not normal circumstances so I am going to have to pull it together and help the kid out.
It’s kinda late right now so I’m guessing it’s not for dinner tonight. But tomozza you could be eating…
vege patties with smoked salmon and jalepeno yoghurt
1 tin baked beans, drain the sauce off
1 cup red lentils, cook until soft and mushy. Probably 30 minutes(ish)
1 cup pumpkin, peeled and cooked. Much like the lentils
1 egg and an extra if needed, free-range n all that shite
1 Tbls curry powder, garam masala, or something similar
0.5 cup self raising flour
bread crumbs or flour to coat
natural yoghurt mixed with jalepenos, chopped coriander and seasoning, to serve
smoked salmon, to serve
Mash the beans, cooked lentils, pumpkin, self raising flour and curry spice together. Not too much though. It doesn’t want to be smooth. Well not John Travolta smooth, anyways. Form the mix into patties and roll through the bread crumbs. Pan fry in a little oil (med heat) for 4-5 minute each side, or until golden brown. That’s golden brown, not pale yellow or black.
Put a pattie or two down, top with jalepeno yoghurt, some smoked salmon and a bit of rocket or parsley from your garden. Put some kinda salad or chips or something on the side and whoop-dang-diddy-wollop* I think.
