sammy’s picnic lunch

Sammy’s going on a picnic. Isn’t that cute. I did not know that gelfling’s knew about picnics, but it certainly is cute that they do.

Sammy seems to have a bit of a good flavour combination thing goin on. Today she has smoked salmon, red onion, sour cream, dill and horseradish. Classic flavour combo in any language. Hopefully she has some tinned baby beetroot in the cupboard and maybe some leaves of some description and we’re in business.

Smoked salmon salad with sour cream and dill dressing.

To make the dressing take one cup of sour cream and 2-3 tbls chopped dill, depending on your taste. Whisk in 50ml milk to loosen the sour cream into a dressing. Season with salt and pepper.
Slice the red onion into very thin rings, cut the baby beets in half and tear a bit smoked salmon.
Combine it all on a platter or bowl or whatever. Dress just before serving… yes that’s right. So your salad doesn’t get soggy. If you are taking this on a picnic put the dressing in a jar so you can dress it on site. This is actually good advice for any leafy salad you may be taking on a picnic or to a dinner or to a loved one in jail. Keep it fresh.

This could be a bruschetta quite easily. Instead of loosening the sour cream with milk spread it over some grilled bread, top with the salmon salad stuff and eat in your face.
