After my disappointment at a recent experience at the local kebab joint I decided I owed it to myself and you, the people, to right this wrong and make my own far superior lamb kebab. At this point in time I am pleased to announce that my mission was an outstanding success. Go make one today.

The lamb shoulder was rubbed down with a Moroccan spice mix (recipe below), covered with foil and slowly roasted for 5 hours at about 150C. It would have been AOK to not worry about making the rest of the kebab and just eat the lamb by itself, but I set out on a mission and by the dear lord I was going to complete it!

MOROCCAN SPICE MIX

½ cup each coriander seed, cumin seed, sumac, cinnamon

¼ cup chilli flakes

1 tablespoon cardamon

  • Toast cumin and coriander seed
  • Grind all whole spice and mix it up
  • Use half a cup to rub all over the sexy little lamb shoulder, and the rest? You will be limited only by your lack of imagination…

BABAGANOUSH

2 large eggplant, grilled whole over an open flame, for that lovely smoky flavour

2 cloves garlic

2 Tbls tahini

¼ cup lemon juice

½ cup chopped parsley

¼ cup EVO

seasoning

water

  • blitz all except parsley and olive oil, adding a little extra water if needed to make a smooth puree
  • emulsify olive oil into the puree
  • season and fold through chopped parsley

FLATBREAD

I used the stuff I had with the dahl I made a while back…

CUCUMBER AND RADISH SALAD

1 handful chopped cucumber

1 handful chopped radish

½ handful chopped tomato

½ handful chopped red onion

1 handful chopped parsley and mint

1 handful natural yoghurt. Or maybe we should use a cup for this one. Yeah, let’s use a cup…

a splash of olive oil

  • combine all ingredients and mix well. Season with salt and pepper
make heaps and invite your friends over to show them how awesome you are...

ASSEMBLY

Put it all together just like the pretty photo, chuck a few leaves and a bit of pickled zucchini in there and hit it with a bit of sumac at the end…

  1. Good on you for stepping up to the challenge of making your own kebabs. I’m one of those people who can’t eat out without wondering, “Could I cook this better at home?”.

    Well done on this spice mix and 5 hours of roasting sounds like the meat was lovely and tender. I think I would have to leave the house though – the wonderful smell would drive me crazy!

  2. Looks damn good. We have a kebab shop down the road in Sandhurst, U.K. where they make a naan bread in the tandor oven ans pile it all inside that. With a garlic mayonnaise it is about as good as it gets.
