This is my flatbread recipe. It’s really good for a kebab or gyros.
So what I will do is give you the recipe for the flatbread and then it’s up to you what you put in it. My suggestion would be to look to all of your already favourite flatbread wrapped foods ie. the doner kebab, gyros and shawarma for inspo on fillings and combinations, and then maybe you can let your inner Ken Done be free.
Fried chicken, smoked lamb and grilled pork belly are a few of my favourite proteins to start my bastard kebab party. Shredded lettuce, sliced tomato, sliced brown onion with sumac (exactly what it sounds like it would be), garlic yoghurt sauce (I’ll give you a recipe for that one below), hot sauce and hot chips (fries) are a damn good start on the other protagonists so this party has was it needs to keep going all night long.
Quite the bastard kebab indeed.
NB These flat breads are best consumed after you have given them the opportunity to rise to their full potential by cooking them in chicken fat.



MY FLAT BREAD
(makes 10 breads)
3 cups plain flour
1 3/4 cups self raising flour
1 teaspoon salt
¼ cup plain yoghurt
1 tablespoon vegetable oil
300 ml warm water
Plain flour for rolling
Chicken fat (or vegetable oil) for cooking
Tea towel for wrapping
Place dry ingredients into a large bowl and mix.
Add yoghurt, oil and warm water and mix well to combine.
Turn dough out onto bench dusted with plain flour and then chuck a little flour over the top of the dough too.
Gently start to knead the dough.
Keep needing for 2 minutes, adding a little extra flour if the dough seems a little wet and sticky.
Once dough is desired consistency, place back into bowl and cover with cling wrap. Set aside to rest for 1 hour.
Once rested, turn dough out onto a floured bench and stretch into a large sausage-esque shape.
Cut the dough sausage into 10 equal portions, rolling them into ball-like shapes as you go.
Roll dough balls out into 2-3mm thick flat breads.
Heat a little chicken fat or oil in a large pan or skillet over medium flame.
Gently place flat bread into pan and cook for 2-3 minutes, flipping every 40 seconds or so until done.
Repeat until all of the flat breads are cooked.
Wrap cooked flat breads in a towel to stay warm while you cook the rest.
Start your bastard kebab party.
GARLIC SAUCE
½ cup natural yoghurt
½ cup mayonnaise
2 cloves garlic, minced up nice and fine
Salt and pepper
