The pancakes supreme with berries, mascarpone and maple butter.

Maple butter is maple quite simply by taking 250g unsalted butter, at room temperature. Unless you live somewhere really cold. The butter needs to be soft. Add half a cup of pure maple syrup (try it. It’s worth the extra money, trust me). Whisk, beat or stir together until well combined. Voila. Maple butter for all your pancakey needs. Any leftover butter can be stored in the fridge for a couple of weeks.

This version got exactly what it deserved. Raspberry coulis, mascarpone and toasted almonds. And, yes. I do enjoy mascarpone with my pancakes…
