The race that stopped a nation… and the burger that helped me survive the day…

The Melbourne Cup…  and a day when only a burger will do…

So there it was. Yesterday was the race that stops a nation. I mean, obviously the nation started up again a minute or two later, but it was that race. I’m sure some kind of four legged equine beast won and I’m also equally sure that that horse will be treated very kindly and allowed to bask in it’s glory, unlike the blue medal winning cow from the local show, which was sent to the abattoir and in turn will end up in my burger today.

Back to the race… just briefly though.

Yes, it was the race that stops a nation. But I really could afford it very little interest as I sat and contemplated the previous three days of my life, which I shall fondly refer to as “the days that stopped my brain”. Three days of a nice little bucks weekend in honour of my good friend Micky and the vows he shall be making shortly, and also the three day back-stage pass that my brain received to total oblivion. But, other then the information I have given you about my brain being MIA, you will not read anything about said weekend on these pages, for what happened at starfish 3 stays at starfish 3.

I saw only one way to get through; I really needed a burger. That, plus some herby oven fries were quite literally the only thing that would get me through the afternoon and place me comfortably into the arms of the sandman so I may dream a sweet sweet dream and awake to discover that my brain had been returned to me. This is what I did.

BURGERS FOR FOUR (in hind sight it should have been five or six. These were big assed burgers)

1kg prize winning beef mince

salt and pepper

buns, cheese, pickled cucumber, ‘slaw, tomato sauce, yellow mustard and oven fries to serve

  • This is a easy burger mix for your brain and your pantry
  • Mix it all together and form into four patties
  • Grill or pan fry over high heat for 4-5 minutes each side, depending on how well you like them cooked
  • Serve with really healthy ‘slaw with heaps of herbs from the garden so it is a almost healthy burger. This will make your brain feel good

500ml apple cider vinegar

1 cup castor sugar

1 teaspoon whole black peppercorns

½ teaspoon mustard seeds

1 large cucumber… preferably not the one from the bucks night. And 1 eshallot

  • Put everything except cucumber into a pot and heat slightly to dissolve sugar
  • Well done
  • Slice cucumber and eshallot up nice and thin and whack it in there for at least half an hour… long enough to make your burgers

4-5 large potatoes, scrubbed and sliced perfectly into 9mm fries

a good pinch each of dried oregano and thyme

1 tablespoon of oil

  • You can blanch the potatoes first, but today I just really cannot be assed. They still work fine if you just bake them straight up
  • Pre-heat oven to 200C
  • Toss fries in a bowl with herbs, oil and a big pinch of salt
  • Bake for 30 minutes or so, tossing every 5-10 minutes (the fries that is!). You may need to toss them more regularly in the last 10 minutes when they start to get some colour

Oh my freaking gosh. Those big assed burgers look absolutely effing amazing. Love the addition of the pickled cucumber and those herby oven fries. I make similar oven fries when we have burger nights… but I think I’m going to be a lemming and try your pickled cucumber and ‘slaw version with my next batch of burgers. So good. Oh, and by the way, I got the WORST pick in the cup sweep. Second last (not even last, so I couldn’t even win the booby prize). El crappo.

    1. A burger like this will far out-way any sweep win. Do it my friend!!
