Breakfast tacos with chorizo salsa

The chorizo is going to carry the team to tasty-good-times town in this recipe so please be sure to procure a sausage of reputable origins and known flavour punch. Also, leaving the salsa ingredients fairly chunky to grill and then chopping them after allows them to get a little more caramelization which in turn allows your mouth to have more good times.

And I know we all love mouthy good times.

If it is not obvious, I would like to mention that ingredients such as cheese or avocado would have a good home in these tacos also.

BREAKFAST TACOS WITH CHORIZO SALSA

(serves 2)

1 chorizo sausage, chopped
1 tomato, cut in half
½ capsicum, cut in half
½ onion, cut in half
4 eggs
4 tortillas
Salt and pepper
Olive oil
Hot sauce and coriander, to serve

Heat a little oil in a pan over medium-high flame.
Add sausage, tomato, capsicum and onion. Hit it with a little seasoning and grill for a few minutes or so until things are starting to colour up a bit, turning a few times during the process.
Once cooked, place salsa ingredients onto a cutting board and chop together.
Slide it all into a bowl and moisten with a splash of olive oil. Check seasoning and adjust if necessary.
In the same pan grill tortillas for 30 seconds each side to warm through.
In the same pan again add another splash of oil and fry some eggs to your liking. Give them a flick of seasoning too.
To assemble, place tortilla down, top with egg, then salsa, then a little hot sauce and coriander if it takes your fancy.
Into your mouth is where they go now. Don’t forget to chew.
