SLOW ROASTED BEEF BRISKET WITH GRILLED CORN RICE & PICKLED ‘SLAW (for 4-6 slap jawed yokles)

 

I have to say this is inspired by the Americano bbq feast Queenie cooked up last weekend. I coudn’t hold myself back. I went to work this week. Got a big ol’ wagyu brisket, and there it currently sits, marinating in a mix of cumin & coriander seed, garlic and cocoa powder. And today I shall have my way with it… haha… hahaha… hahahahahahahahaahah.

For the brisket

1.5-2kg brisket

4 cloves garlic, peeled

1 brown onion, peeled

2 Tbls each ground roasted cumin and coriander

1 Tbls cocoa powder

2 Tbls bbq sauce

seasoning

  • Blitz everything, except the brisket, to make a marinade. Acutally if you are simple enough to think you can blitz a 2kg piece of brisket go for gold. You deserve that end result
  • If you still have a whole piece of brisket rub it down with the marinade and leave it in the fridge for at least half a day, or preferrably overnight… even Shantell, my apprentice will tell you the benefits of marinating overnight
  • Roast at 160C for 3-4 hours, or until you can pull it apart with a fork. Baste it with the pan juices a couple of times

For the grilled corn rice

2 cups long grain/ basmati rice, cooked

2 cobs sweet corn

1 tspn ground roasted cumin

1 tspn dried oregano

a good pinch chilli powder

1 Tbls butter

s & p

  • Brush corn with oil and flash in a hot pan or on a grill to get a few black marks on it, cut off the cob
  • Combine all ingredients and cover to keep warm

For the ‘slaw

¼ drum head cabbage (the honky dory variety you get from the market), shredded as fine as you can. Do be putting any big chunks of cabbage in my coleslaw. And if you are my mate Kuso probably don’t make the colesalw at all because he doesn’t handle the thought of raw cabbage to well

1 carrot, grated

½ red onion, peeled, slice as fine as you can

1 Tblsp red wine vinegar

3 Tbls home-made or whole egg mayonnaise

s & p

  •  combine all ingredients

Plate up and dress with a little yoghurt and jalepeno if you desire. I desire. I desire a lot… This food ruled!!
