Really simple sausage rolls with BBQ leftovers.

As the title might suggest, this is a recipe for the simplest of sausage rolls using leftovers from your weekend cook up. I know left over BBQ is a foreign concept to a lot of people so I say if you are one of these people, chuck a bit of extra pork in for these sausage rolls. I can guarantee you will not regret it. Any complaints feel free to call me. Here’s my number.

BBQ LEFTOVERS SAUSAGE ROLLS

1kg or so smoked pork or beef
1 cup breadcrumbs
1 onion, roughly chopped
1 carrot, roughly chopped
2 cloves garlic, chopped
A sprinkle of your favourite BBQ seasoning
6 sheets frozen puff pastry
Egg wash to egg wash

Pulse onion carrot and garlic in a food processor until its chopped quite small but not a paste. Alternatively, you could finely chop it all with a knife.
Pulse or chop the meat as well.
Mix all ingredients together, omitting pastry and egg wash. Yeah, I know. Omit is a fantastic word.
Check the seasoning and add a little more if it needs some.
Roll into a sausage roll type thing. Make sure the pastry over laps by at least an inch. Smart people put the seam of the pastry on the bottom.
Cut rolls in half.
Brush rolls with egg wash.
Place onto a lined baking tray and bake in a preheated oven at 200 C (390 F) for 30 minutes or until golden brown.
Eat that. Tomato sauce (ketchup) or BBQ sauce is still pretty essential for me.
