This is the dinner I cooked last night. I think it took me about 20 minutes from start to finish which, just between you and me, is heaps better then my performance in bed.
This is a good warm salad for winter, and is also a cracker if you’ve been lacking roughage in you diet. This little puppy will have you going from naught to a hundred in 3.4 seconds. And if you’re still having troubles with a bowel movement try a little sauerkraut as well. Guaranteed results.
Warm vegetable and lentil salad
1 carrot, cut into batons
1 zucchini, cut into batons
1 broccoli or bunch of broccolini, cut into similar sized pieces
a few batons of firm tofu
1 tomato, diced
1 handful parsley from the garden, chopped
1 handful rocket from the garden, chopped
a few pieces of soft cheese; camembert, brie, taleggio
balsamic vinegar
olive oil
salt and pepper
- Put the carrot, zucchini, broccoli and tofu in a hot pan with some oil. Get some colour on them but keep them al dente (if you don’t know that one by now, look it up)
- Toss with tomato, parsley and rocket. Dress with olive oil, balsamic and a fair bit of salt and pepper
- Divide into bowls and top with a few pieces of cheese
- Eat, and feel the healthy punch you in the face
