Something for young lads (or ladies) to cook in a pan.

If you feel my title is a little bit on the vague side then I must agree, but this is basically what Graeme sent me as a challenge, what he actually sent me would have had many more swear words and would of started of with the customary insult wrapped up in a sudo gay message. But this was the jist, and as I’m a team player I have decided to run with the title only and from here on in just write about whatever I feel like…

Shuttlecocks are possibly the greatest name given to a piece of sporting equipment, it was 1746 in a rural part of England when Sir Alfred James Shuttlecock first had sex with a large hamster named Brian… hang on

Maybe just maybe I should include food in this tale of woe and tragedy, that or we could change the name of the blog to ‘Hamstersarethebestshitever.com.au’ so with my amazing ability to combine facts with fiction and soft animal porn my story will continue…

Ok, I believe we had set the scene and Sir Alfred and Brian where more then enamored with each other, but nothing builds up an appetite like fictitious love scenes, so cue segue for my very easy pulled pork salad… BAM

Pulled pork

• 1kg pork shin or shoulder (I really don’t care which) cut up into large chunks • 4 star anise • 2 cinnamon quills • 100g yellow rock sugar (yeah that’s right the Asian one, well done!!) • ½ cup chinese cooking wine (see line above…) • ½ cup black vinegar (you getting the vibe yet?) • ½ cup light soy • 3 long red chillies (deseeded and julienned, cut in strips for those not in the know, and by strip I mean really fine slices, and by slices I mean…) • 1cup basil • 1cup coriander • 1cup mint • 1/2cup crispy shallots • 1 tablespoon crispy garlic

All right lets get this show on the road and by show I mean pork and by road I quite obviously mean a pressure cooker (if you don’t have a pressure cooker… haha).  Place pork and half of the star anise, cinnamon, sugar, wine, vinegar and soy in the pressure cooker and cook for 28 minutes, then let cool a little and shred either with your fingers, someone else’s fingers or with something that looks like fingers… Place the other half of all those ingredients you used in the pressure cooker in a pot and simmer until the sugar is dissolved, when the pork is ready add ¼ cup of the cooking liquid into the sauce… BAM you now have your dressing Now mix all ingredients together, adding the sauce/dressing a little at a time as you may not need it all (that’s right. I haven’t measured this out exactly, so what worse thing that could happen is that you will have some amazing dressing spare… you’re welcome!!).

Now you have the most delicious pulled pork ever…

What to do with it?

1. Eat it you silly twat!!
2. Serve it with seared scallops
3. Put it in a baguette
4. Make jaffles
5. Rice paper rolls
6. Use as very ineffective cement for a mud brick house
7. San choi bau
8. Pork croquettes
9. Fill up small buckets and make pork sand castles
10. I don’t care…..

So whether you like a game of badminton or like to roger rodents this dish is for you… challenge complete… BAM
