Horseradish mayonnaise and king prawns

This is a simple little recipe for a simple little world. Bah. I wish. For the simple little world, that is. I can guarantee this will be the simplest dinner you’ve made since sand pit mud pie.

I would say this recipe is so simple that it will need to be relegated to the league of serving suggestion.

It’s a menage a trois for that night when you get home late from work and you want to make yourself a little something something for dinner but all you have in the fridge is a kilo of beautiful, cooked king prawns, mayonnaise, and horseradish cream.

PS That last little list of the final trio of ingredients in my fridge was actually a lifeline of hope for humanity as I pray that you have enough common sense to take a look and make sure you put those things on your shopping list for next time.

HORSEADISH MAYONNAISE & KING PRAWNS

(serves 2)

1 kg cooked prawns. There’s not much else going on here so this is one of those occasions where you should get the best you can find
1 cup mayonnaise, Kewpie or otherwise
2 tablespoons horseradish cream
Lemon to serve

Mix the mayonnaise and horseradish until well combined.
Serve mayonnaise with prawns and lemon on the side.
Eat prawns and drink champagne with a partner of your choice.
